Red lentil Sloppy Joe
This is a great Sloppy Joe. What stands out is the texture. The red lentils have broken down enough to create a thick emulsified base, while the mung beans, mushrooms and carrot pieces have retained some structure.
This was also a bit of a “Double Bubble”: first cooking enough carrots to create a carrot mash, and then continuing with same broth to make the Sloppy Joe. Two recipes for the work of one.

Nutrition
The main nutritional story is the combination of legumes, vegetables and broth, with enough breakdown for cohesion and enough intact ingredients for texture.
Legumes and carotenoids
The lentils and mung beans contribute protein, iron, magnesium and B vitamins, while the carrots supply beta-carotene, lutein and zeaxanthin. Together they create a broader nutritional profile than either ingredient alone while supporting digestive health and microbial diversity.
Mushrooms and legumes
Chestnut mushrooms complement the legumes by contributing B vitamins, selenium, copper and antioxidant compounds such as ergothioneine. This broadens the micronutrient profile and adds compounds not usually associated with pulses.
Broth and palatability
The beef broth contributes flavour, hydration and collagen-derived compounds while helping distribute savoury flavours throughout the dish. This improves acceptance of ingredients such as lentils and mushrooms that some dogs might otherwise find less appealing.
Fibre variety
The combination of carrots, mushrooms, lentils and mung beans creates a varied fibre profile. Different fibres are fermented differently by gut microbes, making dietary variety one of the strengths of the recipe.
Micronutrient pairings
Iron availability
Sprouting mung beans and cooking lentils lower phytate, making their non-haem iron easier to absorb.
Carotenoids and fat
A little fat from the beef broth helps the body take up the carrots’ beta-carotene, lutein and zeaxanthin.
Copper and zinc balance
Chestnut mushrooms add copper, while the legumes supply zinc, keeping these trace minerals in proportion.
Digestibility and bioavailability
Mixed fibres
Lentil gums, mung-bean hulls, mushroom β-glucans and carrot pectins feed a wider range of gut microbes and encourage short-chain fatty-acid production.
Gelatin with legume protein
Broth gelatin (rich in glycine and proline) teams with legume amino acids to support tissue repair and gut-lining integrity.
Lentil-thickened base
The natural emulsion slows gastric emptying and moderates glucose release, while intact mung beans and carrot pieces keep the texture varied and encourage chewing.
Practical rotation note
Because this mixture is already rich in plant fibre and non-heme iron, it should be served with a lean animal protein. Avoid liver or extra brassicas; skip eggshell powder on the same day to keep calcium-to-iron competition low.
Ingredients:
1.5 litre jellied beef broth
1 kg carrots (or 300 g if you aren’t making the carrot mash as well)
250g chestnut mushrooms, roughly chopped
425 g red lentils
300 g sprouted mung beans
Method:

Place jellied broth in slow cooker, add 1 kg of carrots and cook for approximately three hours or until the carrots are soft enough to mash with a fork.
Split the carrots, keeping 300 g aside for the red lentil Sloppy Joe.

Mash the remainder of the carrots with a fork, leave to cool and refrigerate or freeze. And feed a little taster to the audience if appropriate!
Add the mushrooms to the slow cooker.

Then add the red lentils and sprouted mung beans.
Cook for a further two hours (this was on automatic setting in my slow cooker).

Reintroduce the reserved carrots and leave in the slow cooker to cool slowly.
Decant into freezer containers and refrigerate or freeze.
The tasting

The jury was unanimous. The tasting bowls were emptied. The test portions disappeared immediately.
And now one of the panel members is conducting a forensic examination of the slow cooker to make sure not a single scrap remains.

Synergy snapshot
Carrot carotenoids absorb better in the presence of salmon-oil fat.
Residual vitamin C in lightly cooked cauliflower aids legume iron uptake.
Copper from mushrooms is balanced by zinc from chicken, keeping trace-minerals in check.
